Just Can't Resist Em!
Need a break from everyday worries? ENJOY!
Chocolate Pecan Butterscotch Blondie
1/2 cup unsalted butter
1 1/4 cup packed brown sugar
1 1/2 cup whole-wheat pastry flour
1 teaspoon baking powder
1 teaspoon salt
2 large eggs
1 teaspoon vanilla
1/4 cup toasted chopped pecans
1/2 cup butterscotch chips
1/2 cup semi-sweet chocolate chips
1. Preheat oven to 350F. In a medium sized saucepan, melt the butter over medium-high heat and stir in the brown sugar so that it's well mixed into a goopy syrup. Remove from heat.
2. Combine the flour, baking powder, and salt together in a large bowl.
3. Once the butter/sugar mixture cools a bit, add in the eggs and vanilla and stir until combined. Pour mixture into the flour and stir until just mixed. Add in the pecans, butterscotch chips and chocolate chips, stirring well so that everything gets mixed together.
4. Pour the batter into a buttered 9x9 inch baking dish, smoothing out the top with a spatula. Bake for 35 minutes or so until the center comes out relatively clean, the top is golden and the sides start to pull away from the dish. Cool and cut into squares.

My Response to Rep. Fred Larson, WA about Passage of The Health Care Bill
Dear Sir,
MY response to the passing of the One Healthcare Bill for All last night.
Due to the passage of this supposedly helpful bill, my daughter is likely to lose her 10 employee business which she is hanging on to by a thread now. She is a young, successful entrepreneur who has succeeded in maintaining her business through a rough recession and we are so proud of her accomplishment. Her contracted people have insurance through their spouses and free market policies. When she is required by your bill to start paying the premiums for them or is penalized by $2,000 for each for not doing so, her American Dream will shatter and so will ours. This will happen to many small businesses across this great Nation, whether you want to believe it or not. Is that an outcome you support? I suppose you will say that employees will have an opportunity to buy into cheap insurance through the government. Yes--but can they be cared for the way they were under a freely chosen policy? Can they even afford the $750 penalty if they can't find a job? What category do they fit into then---oh, I forgot--jail.
As retirees, we have worked over 50 years to get us to this place in our lives. We worked hard to pay off a mortgage, make sure we had adequate income via investments, and nurtured wonderful family and friends.
To see OUR America being taken down from within by our own leaders led by the President of all people! It is so devastating. My husband served in the Army to keep us free. My uncle died at Normandy to keep us free. My brother healed people in the front lines in VietNam to keep us free. For this?? A band of pirates taking over the ship salivating for the goods??
I get a sick feeling in my stomach as do so many--especially after the Stupak deal of airport $$ for his pro-life votes-- that we will never enjoy Freedom again as we know it. I cannot begin to tell you how disgusted and disallusioned I am by the current one-party system in Washington. Do not be surprised if there is rioting in your streets. I suppose you have an answer for that too. Civil Police.
I will be learning about new candidates, educating my friends and working to unseat anyone who does not live up to our American Ideals.

Life Choices--at The End
On January 3, 2010, at 2:45PM, my 59 year old sister-in-law, Dee, passed away of cancer. She endured the prodding and poking, toxic effects of chemo, endless hours waiting for results, and finally loss of hope. After 3 and a half years of stoic determination to beat the injustice inflicted upon her, Dee came to a final decision to create a peaceful and memorable end of life scenario.
A hospital bed was set up by Mike in the living room so that she could daily see the peaceful flowing river, the evening sunset, the morning sunrise and small animals outside her picture windows. Her favorite things were in the room around her, and quiet, calming music played in the background. For many weeks, Dee was taken care of by her loving husband and hospice friends, at any hour of the day or night. She was never alone. She was always comfortable and devoid of pain. Visitors could come and go, family could sleep in the big recliner near her, she could partake in every day goings on in the family.
She had requested that Mike build her a simple wooden casket which he did with love and devotion, and she was able to plan her memorial service with her family. With their loving support, they took care of her at home until her last breath. No funeral home was required. A lovely church visitation and service on the first day after her passing, and a moving service and visitation at home followed the church service with lovely tributes to her by clergy, close family, and friends--all at home. Her closest lifetime friend sang a favorite hymn that Dee had requested. When she felt the mood was right, a pure single voice emerged from the back of the room. It was perfect. Stories were told, poems were read, bible verses were recited, all for Dee.
The personal care that Dee received allowed her to spend valuable and loving time with Mike, family and friends. Her story was well known at the local hospice, where she had been a beloved nurse to others for over 13 years, and she was chosen to be interviewed by a group doing a documentary on end of life care. The good people who are making the film are attempting to learn more about how we can better care for loved ones in this stage of life. Is it better to take the toxic drug route? Or, should we provide loving end of life care at home for those we love and cherish? Dee will be in the final documentary when it is published. I hope you get a chance to see it. Dee made her mark on the world at the end of her life.
Some might say that it is not easy to manage caring for someone at home at the end of their life, but what if it was made easier? Would you then consider it? Please take a look at the stirring trailer, "One Step Closer". You decide.

Waiting It Out...
Well, I m sitting here by the fire waiting for this dang respiratory virus to get it over with. I usually get out the door to walk the usual river route in the morning for exercise and just to enjoy the scenery. Not so for the past two we
eks. Amazing what a little upset in your routine can lead to. I actually started a blog, among other things--in between naps. And, I was able to get some food out to a nice woman suffering from several herniated discs who can't stand up to cook. I am counting my blessings today. Hope you are having a good one too.
